Their purpose is to reach the most optimal level of balance. To reach it, the extremely complex structure needs time. The maturation process is very complicated and individual for each bottle, as well as very sensitive to any external stimulus. By provision of the proper conditions in place of wine storage we may however have an influence on the appropriate direction of these changes. It should be remembered that wine of known provenience, monitored and professional storage conditions, which may be documented, gain in market value significantly.
